“Endo diet” Inspiration

So, you read my book and now you’re curious what eating 6-9 cups of veggies a day looks like? How to prioritize things like sardines and salmon, heart and liver, roasts, and egg yolks? Maybe you’re unsure how big a meal should look when you aim to quick snacking in between (hint: they’re a lot bigger than you’re used to). If this is you, you’ve come to the right spot! Here I will simply show you pictures of the meals I eat. They are not glamorous photos, and admittedly some meals look a little strange. But as I keep repeating, eating like this has to be a lifestyle and a reasonable one at that! That means finding time to eat like this while juggling two kids (if you’re me) cannot be so hard that we all give up and buy Pop-Tarts. I keep sane by ditching perfection (as you’ll see), abandoning wasteful hours spent on my phone, and planning, planning, planning. Oh, also with the help of leftovers :)

If this is brand new to you, start with one meal: breakfast. That’s it! Focus on perfecting a breakfast that holds you over 4-5 hours. Done? Great, now add dinner. And while you’re making dinner, make extra for leftovers that will become lunch tomorrow. See? Now you have all three meals taken care of. Not too hard (said an overly enthusiastic nutritional therapist).

No, but joking aside, take your time. Meal by meal, get better at cooking, prepping, planning, and even eating. Smile, enjoy the process, never count calories everrrrrrrrrr, and love your new life, your new energy, and (hopefully) less endometriosis symptoms.

ENdometriosis Diet Breakfast

Breakfast has to be quick in our house because we have work to get ready for, preschool lunch to be made, and kids to get out the door. Again, this is why I’m a massive proponent of batch cooking and food prepping, so you can reach in the fridge and grab pre-washed and chopped veggies (ready to throw in the pan and cook) and reheat food already made. My goal with breakfast is to focus on protein first and foremost since this meal sets you up for the entire day of blood sugar balance ahead. Click on the photos to read a description!


ENdometriosis Diet Lunch

For me, lunches are almost always leftovers, items from batch cooking or food prepping, or otherwise involve easy-to-put-together ingredients like nori wraps, avocados, salmon, or sardines. I DO NOT HAVE TIME to make three extravagant meals a day, and I doubt you do either. Make it a habit to make lots of dinner and then eat the leftovers tomorrow. ENdometriosis Diet Dinner

At our house, dinner is when I get to cook for real. This works well for my schedule, but if it doesn’t work for yours, choose another meal that you can focus on making food. Enough food to feed everyone and have leftovers. These are some examples of our dinners. Some of them are great, and some examples are the “holy cow, my kids are melting down, and we need dinner in 5 minutes flat!”. You can tell the difference. Check them out.
